Jain catering excludes onion, garlic, potato, carrot, beetroot, ginger, mushrooms and all root vegetables. Substitutes include raw banana, kohlrabi (knol khol), cabbage and paneer.

Real Jain catering requires a separate prep line, separate cutting boards and separate serving spoons — not just a separate pan on the same stove.
