No-Onion-No-Garlic (NONG) — Catering Glossary Definition
A vegetarian preparation without onion or garlic, but with other root vegetables allowed.
No-onion-no-garlic is a middle ground between full vegetarian and full Jain — root vegetables like potato and carrot are allowed but onion and garlic are excluded.
Common for satvik, religious or festive celebrations. The tempering base changes to hing (asafoetida), ginger and green chilli.
